Chrondrus Crispus is red algae that is grown among rocks along the coast lines of North America, Ireland and Jamaica. This Rocky seaweed specie is known as Carragreen (Irish Moss). This has eleven (11) a cepted species.

Carrageen ( Irish Moss) is an antioxidant and also possesses antiviral and anti-bacterial properties. This is a natural support for the digestive system and also used to treat skin aliments. Carrageen the red algae is Rich in gelatinous property, that can used to clean the teeth.

Carrageen (Irish Moss ) is brewed in Jamaica as a drink of 'vigor' and is also used as a herbal medicine Carrageen (Irish Moss) is very popular and is used to make a wide variety of recipes.

Carrageen popularly known as Irish Moss in Jamaica was brought to the island during the 19th century by Irish immigrants .Apart from being a drink carrageen (Irish Moss) is widely used in factories to make products such as ice-cream, toothpaste, pharmaceuticals and pastry with the gelatinous property it possesses.

How to prepare Irish Moss the drink:

To prepare Irish Moss drink the red algae has to be boiled and then the liquid extracted . Milk is then added to the mixture which is sweeten with all the delicacies to taste.

N b. Irish Moss is edible both raw and cooked.

In high consumption Irish Moss the Carrageen may cause inflammation and digestive issues.
